MomMom’s Old Fashioned Pumpkin Pie
Real Pumpkin Makes the Difference!
- Cut your pumpkin in half across the middle (so that the stem is on one half and the bottom is on the other half)
- Scoop out the seeds and stringy stuff
- Place pumpkin on a shallow backing dish cut sides down
- Pour a small amount of water on the baking sheet around the pumpkins
- Cook at 350 degrees for about an hour or until the tops feel soft and start to fall in
- Scoop out the pumpkin meat leaving the shell
- We usually bake several pumpkins in the fall and freeze it in bags with 1 ¾ cup of pumpkin each so it is ready to thaw and make pies all winter long!
Pie:
- 1 ¾ cup Pumpkin
- 1 cup sugar
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp ginger
- ¼ tsp nutmeg
- 2 eggs beaten
- 1 can evaporated milk
- Blend all ingredients in a blender until smooth
- Pour into an uncooked pie shell
- Bake at 425 degrees for 15 minutes
- Reduce oven to 350 degrees and bake for an additional 35 minutes or until set.
- Do not cook your crust beforehand or put holes in your crust
